Menus for March 5 to March11 ~~ Monday through Sunday

Monday~ Pork Chops and Potatoes, little green lima beans, applesauce

I like to start out the week with an easy but hearty meal~ Pork chops and potatoes is a recipe that my Mama made frequently and it’s one that she made up herself~It’s so easy and delicious, the juices from the pork chops cooks the potatoes and they taste like you worked hard on this dish when actually it only takes a few minutes to get it in the oven!

 

 

Tuesday~ Salmon Patties, mashed potatoes, green beans
An easy to make meal~ I usually have grits with salmon patties but since everyone does not love grits…mashed potatoes is a good substitute~ I always use instant mashed potatoes, my kids do not like homemade ones, but you can make homemade ones if you like.
Wednesday~ Pasta Primavera, cinnamon pears
We have to have a pasta dish at least once a week~ you can use any kind of pasta you want and substitute any kinds of veggies/seasonings you like, it always comes out tasting good~ Cinnamon pears..just use canned pears and sprinkle with cinnamon or cinnamon sugar~
Thursday~ Smoked Sausage Italiano, California Medley (broccoli, cauliflower, carrots), peaches
My husband loves Smoked sausage so I came up with Smoked sausage Italiano, you can kick up the spices and use hotter sausage if you like~
For the broccoli, cauliflower, carrots medley you can use fresh or frozen…also you can sub any frozen veggie you like~ I season mine with Mrs Dash Garlic and Herbs, if you don’t like garlic you can use Mrs Dash Onions and Herbs…Mrs Dash seasonings are really GOOD!
Friday~ Baked Garlic and Herb Tilapia, succotash, beets
I use frozen or fresh Tilapia, put it on a baking pan sprayed with cooking spray and sprinkle the fillets with Mrs Dash Garlic and Herbs and a little black pepper~ Bake at 350 degrees for about 20 minutes (or until fish flakes easily with a fork) ~
I always use frozen succotash and season it with salt. pepper, and a little margarine~
Beets…canned or fresh, whichever you like better~ I love beets, I think they taste like sweet carrots~
Saturday~ Quesadillas, Salsa Rice, Baked Apples
For the Quesadillas, you can use cooked meat or none, I prefer just salsa and cheese in mine and cut them into quarters with a pizza cutter.
The best salsa rice is made using a pack of Mahatma or Viggo Yellow rice and add salsa for half of the water called for. But you can make it using plain white rice, jasmine or basmati rice, or brown rice.
Sunday~ Oven Fried Chicken, Broccoli/Cheese Rice, baby carrots
We love this fried onion crunchy chicken and I didn’t think I’d like it ~but it’s good, you just have to try it!
You can sub mixed vegetables for the broccoli in the broccoli cheese rice too~
Baby carrots.. sometimes I use canned but most of the time I use a 16 oz. bag of fresh ones and cook them until they are to your liking.
Dessert of the Week~ Pineapple Upside Down Cake
I got the idea for this from Eva Longoria’s recipe for Pineapple Upside Down Cake~ I made some tweaks to the cake batter and it’s mine now~

    You are so organized. I wake up and grab something out of the freezer to thaw in the morning. Since I don’t eat meat and my husband does I have to cook me a seperate protein, There are always veggies/rice/pasta. I am not creative in the kitchen. I love my crockpot.

    Donna, I love my crockpot too~
    It’s the best for cooking tough cuts of meat.
    My favorite is to dump a 3 lb. bag of frozen chicken legs in there and let them cook all day, then pour off all the liquid and pour bbq sauce in and let it cook for about an hour more~ You cannot get any easier than that!
